NO BAKE

Salted Caramel Cheesecake
 
Ingredients

Base
 
  • 250 gm Gingernut Cookies
  • 100gm salted butter melted
  • ½ tsp cinnamon

Filling

  • 350gm Philadelphia Cream Cheese
  • 380gm "Nestles" Caramel Top & Fill
  • 1 Tbs lemon juice

Salted Caramel Layer

  • 1 cup brown sugar
  • ¾ cup cream
  • 60gm salted butter
  • ¼ tsp salt

Instructions
  1. Place the ginger nut cookies in a food process and pulse until crushed.
  2. Add the melted butter and cinnamon to the cookie base and pulse until the butter is evenly distributed.
  3. Press the mixture gently into serving glasses.
  4. Place the Nestle Caramel "Top & Fill" , cream cheese and lemon in the food processor and pulse until smooth.
  5. Pipe or spoon the filling into the glasses to form a second layer.
  6. Refrigerate the cheesecakes for at least 2 hours.

Salted Caramel Layer

  1. In a saucepan combine the butter, sugar, cream and salt.
  2. Simmer the mixture for 4 minutes whilst stirring.
  3. Remove the caramel from the heat.
  4. Allow the caramel to come to room temperature.
  5. Pour a thin layer of caramel over the cheesecakes.
  6. Serve with cream and grated chocolate if desired.


Dark Chocolate Truffles
 
Ingredients:

1/3 cup butter + 1 tbsp for the ganache
1/3 cup brown sugar
1 tbsp vanilla extract
1 cup flour
1 cup chocolate chips
1/4 cup dark chocolate


Instructions:

1. Line a baking tray with parchment paper.
2. Beat the butter, brown sugar, and vanilla together. Then, add the flour.
3. In a saucepan, melt together the dark chocolate and 1 tbsp of butter. Incorporate into your dry ingredients. When the mixture has cooled down, add the chocolate chips.
4. Shape into truffle balls and place them into your lined baking tray. Cover with plastic wrap and leave in the freezer for 30 mins.
5. Optional, make more ganache and cover your truffles with shiny chocolate. As you can see, i had no patience for this. I realise now the best thing to have done is to use a fork to stick the truffle right into the ganache.

 
 
 

STAY FIT

After months of being unaware with my habits inclusive of eating, sleeping and every habit in between that definitely put its toll on me. Then I say sorry for the old habit that I finally get to kill at last. With the weight gain program I enrolled myself into, then it is yet to be worked on so I can say it is indeed successful. But don’t get me wrong, I’m proud (ehemp!) I still manage not to join the club of underweight peeps, but too close and it was pretty alarming. Numerous ER trips (which I mentioned in my previous posts) which way, way, waaaaaay scary as hell. For those who haven’t experienced how it feels to be dying (no overemphasis) but I was scared when I really can’t breathe and I can’t explain what I really feel that time. Thank God I survived!! Praise God!

I’m thankful to my doctors who are so patient with their wacko patient who had always been equipped with so many whinges in each and every visit. From the bottom of my not-so-well-shaped-heart, thank you! Now, I’m much healthier and no longer looking frail. I gained meat in proper places (Haha! Ang yabang ko!) But still lacking some mass on the arms department.

Right now, I’m following their orders. Dapat masunuring bata lang, haha! I even remember one of my doctors who will remind me to eat during noontime and to drink a glass of milk before bedtime. Sweet! Just a random thought; are doctors really like this by nature? Maalaga? I have numerous friends who are with the same profession and I even remember one time that I became an instant patient to him when I replied “Feeling under the weather dude” and the response I got was a loooong list of to-do’s so I will feel better. Haha! So I jokingly answer him back “Opo Doc. Noted po” Haha!  

Because I’m still working on being healthier so I will be back to that brink I digressed from, now I need to eat from time to time. I’ve always been a snacker and not a fighter. Therefore I conclude that I’m a foodie and not strong-willed woman. So I’m sharing some healthy snack from Healthy Options that I can eat foreeeeeevah! #PaHealthy


Can you guess which one I’m munching right now while writing this? Though my good friend here at work told me “Huwag ka na mag pataba, tama na yan” Hmmm, a few more pounds until I reach 52 kilos or more then I will be a happy panda! Woohoo!!!




QUIT A BAD HABIT

The liberty of blogging through your phone with the power of SMART is the best thing to do as I sit down and wait for my Mom while she is having her therapy at The Medical City. Nice segue to brag how much I like the internet service of SMART – just the internet service, nothing else.

Since I am refraining from eating donuts until December and it’s been two weeks that my tummy is coffee free, then I give up on these restrictions today. I know, I’m pasaway and I’ll be in deep trouble when my Mother dear finds out.

Deciding to quit a bad habit is very challenging (that’s the best adjective I can think of right now *whistles* #TamadLang) One Friday a month ago, me and my colleagues decided to have our lunch somewhere in the vicinity and ended up at Everything at Steak which definitely I ordered salmon and macaroni and not a steak. Haha! Their specialty is T-bone steak (budget is Php 299 and below) Here are some photos I am sharing for a backlog post. So enjoy!

This is the habit I decided to quit. It was more of peer pressure that I sometimes join the club on breaks. Here’s a final photo that I was caught holding a stick. I’m proud to say that I’m clean for more than a month now – no more puffing. After the numerous ER trips I’ve had, I get to learn my lesson the hard way. My diet was now pollotarian and I’m glad I made the switch. Now, the effect is much, much better.

PINOYDON

Pinoy Tonkatsu Pork, yum yum.. hehehe!!i just had lunch with my co-trainers around 5 pm. hay, lunch pa ba yan? haha! we ate our "lunch" at Pinoydon Rice Bowls. the best word to describe the food is fusion. it is a mixture of japanese and pinoy food. that's where they get the name of the resto. hahaha!
